meet jeremy

Behind Pidgin Hole is Jeremy, a chef and food lover who set out to create more than just a truck—he wanted to build a culinary destination on wheels. Drawing on diverse influences and a passion for flavor, Jeremy designed a menu that reflects both creativity and Portland’s vibrant food culture. His mission is simple: surprise and delight every guest with bold, memorable eats.

    Bite-sized pieces of cauliflower, flash fried and dressed in our house kalbi glaze (vegan, can be gluten-free)

    Crab and cream cheese in a wonton wrapper and deep fried (6 per order)

    Cabbage, carrot, and egg delicately folded into a rice wrapper and fried
